Costa Rica is likely the only country in the world that has no armed forces and has Declared Peace with the rest of the world.
Located at the heart of Central America, it enjoys an infinite variety of tropical micro-climates, Atlantic and Pacific coasts and beaches, rainforests, waterfalls, rivers, sabanas and mountains. There are no hurricanes, blizzards or wild fires. The cost of living is lower than in the United States.
i chose this cake recipe because it looks good and i want to make it.

Ingredients-
CAKE
_ package (1-lb 2.25-oz) pudding-included yellow cake mix
_ cup water
_ cup oil
_ eggs

SAUCE
_ cup whipping cream

_ cup rum, or 1 teaspoon rum extract plus 1/3 cup water
_ (14-ounce) can sweetened condensed milk (not evaporated)
_ (12-ounce) can evaporated milk

TOPPING
_ cup whipping cream
_ cup coconut, toasted*
_ cup chopped macadamia nuts


Instructions-
Heat oven to 350°F. Grease 13 x 9-inch (3-quart) baking dish. In large bowl, combine all cake ingredients at low speed until moistened; beat 2 minutes at high speed. Pour into greased dish. Bake at 350°F. for 25 to 35 minutes or until toothpick inserted in center comes out clean.

While cake is baking, in large bowl, combine all sauce ingredients; blend well. Remove cake from oven; cool 5 minutes. Using long-tined fork, pierce hot cake in pan every 1 to 2 inches. Slowly pour sauce mixture over cake. Do not cover cake; refrigerate at least 3 hours to chill. (Cake will absorb most of sauce mixture.)

Before serving, in small bowl, beat 1 cup whipping cream until stiff peaks form. Spread over cold cake. Sprinkle with coconut and macadamia nuts. Store in refrigerator.

*TIP: To toast coconut, spread on cookie sheet; bake at 350°F. for 7 to 8 minutes or until light golden' brown, stirring occasionally. Or spread in thin layer in microwave-safe pie pan. Microwave on LOW for 4 1/2 to 8 minutes or until light golden brown, tossing with fork after each minute.

HIGH ALTITUDE - Above 3,500 feet: Add 1/3 cup flour to dry cake mix; increase water by 2 tablespoons. Bake as directed above.

In Costa Rica the people eat frequently, especially snacks as they walk down the street. These include gallos (filled tortillas), with meat and vegetables. The staple dish is rice and beans that are eaten for breakfast, lunch and dinner. Costa Ricans eat a lot of meat - beef, chicken, and pork. Eating fish is considered a luxury although fish marinated in lemon juice and spices is a cheap meal. Vegetables and fruits are also popular and cheap. Imported apples and grapes are considered a special treat.

There are restaurants in all the major towns serving a variety of foods. Local food can be found in small 'sodas'. Popular restaurant dishes include: olla de carne (soup of beef, plantain, yuca, nampi and chayote), sopa negra (black beans and poached egg); and picadillo (meat and vegetable stew). I choose this dish because it looks fun to make.

  • 2 ripe medium tomatoes (about 12 ounces)
  • 1/4 cup cup finely chopped white onion or to taste
  • 12 large fresh cilantro sprigs thick stems removed remaining stems removed remaining stems and leaves finely chopped (about ¼ cup)
  • 1 medium jalapeño or small Serrano finely chopped (about 1½ tablespoons) or to taste
  • Juice of 1 lime or to taste
  • 1 tsp olive oil (optional)


Cooking Instructions

Core the tomatoes and cut them in half. Gentle squeeze out most of the seeds and cut the tomatoes into ¼-inch (no longer) dice. Toss the diced tomatoes onions cilantro and jalapeno together in a mixing bowl. Add the salt and lime juice then stir in oil if using. Let sit for a few minutes. The salsa can be made and kept at room temperature for up to 4 hours – no longer – before serving. Stir and taste again before serving.\


Arroz con Leche Recipe (Rice Pudding)



2 cups (470 ml) rice
4 cups (950 ml) milk
4 cups (950 ml) sugar
1 Tablespoon (15 ml) vanilla
½ teaspoon (2.5 ml) ground cinnamon
½ teaspoon (2.5 ml) ground cloves or 6 whole cloves
½ teaspoon (2.5 ml) grated fresh nutmeg
4 oz (110 gr) butter
1 cup (235 ml) raisins

Cook rice uncovered in 8 cups of water for 45 minutes until rice is quite soft. Stir in other ingredients and simmer for 1/2 hour.

Serve warm, or refrigerate at least four hours to serve cold.

Food in Costa Rica varies from the traditional food that has been prepared there for centuries to fast food restaurants that are springing up everywhere. A typical meal in Costa Rica consist of an array of vegetables, fried fruits, and beans served with sides of meat that range from chicken to beef. When it comes to preparation of food in Costa Rica, frying is key. Everything from salad to grilled plantains are fried to make them even tastier than they already are. If dining in Costa Rica, the sodas are where you need to go to make sure you get real Costa Rican cuisine. Sodas are diners that are scattered throughout the country, making them accessible to almost any visitor that comes through. When you order your food at the soda, you probably will want something to wash it down. Coffee is not a good choice. Since many of the high quality coffee is sent overseas, your coffee is of a lesser quality than the coffee we have here. Instead, opt for Horchata, a rice drink consisting of cinnamon and sugar. So when visiting Costa Rica, take some of these helpful dining tips to make your trip even better.
